Coriander Relish

Ingredients:

  • 1 cup chopped cilantro, including stems
  • 1/4 cup vegetable oil
  • 2 tablespoons lime juice
  • 1 large red chilli, seeded and finely minced
  • 1 tablespoon fish sauce
  • 1 tespoon superfine sugar
  • freshly ground black pepper

Chef’s Notes: Place all the ingredients in a small bowl and stir to combine.
